Khandvi



This recipe is adapted from Asha's version at Aroma blog. It turned out to be perfect.

Ingredients

3/4 cup gram flour
1/2 tsp green chilli sauce
Salt to taste
1/2 tsp ginger paste
3/4 cup curd
A bit of hing
1/4 tsp turmeric powder
2 tsp grated coconut
2 tsp finely chopped coriander leaves
1/2 lemon juice

To temper
1 tsp oil
1 tsp mustard seeds
1 tsp white sesame seeds
Few curry leaves
2 red chillies cut into half
Bit of asafoetida

Add 1 cup water to the curd and beat it well. Add the gram flour, chilli paste, hing, ginger paste, turmeric powder and salt as per taste. Mix all these well for a smooth batter. Cook this on low flame with constant stirring to get a thick batter. Check by tasting if it is cooked.

Now spread this thinly on greased plastic sheets with a spatula when it is hot. Allow it to cool and then roll it up. Now cut these rolls into pieces and add the tempering over it (heat the oil and add the ingredients, allow it to splutter). Garnish with coriander, coconut and lime juice.
