Bread manchurian


Ingredients

2-3 bread slices
4 tbsp all purpose flour (maida)
4 tbsp corn flour
4 tbsp gram flour
Salt to taste
1 tsp red chilli paste
1 tsp soya sauce
1/2 tsp green chilli sauce
1 onion cut lengthwise
1 capsicum cut lengthwise
Oil to fry
Finely chopped coriander leaves

Make a thick batter of cornflour, all purpose flour, gram flour, 1/2 tsp red chilli sauce and a bit of salt. Cut the bread into small pieces, dip in the batter and fry them in hot oil till golden brown. Drain out the excess oil using a tissue paper.

Heat 1 tsp oil, add onions and fry them for a minute. Add capsicum and fry it as well for another minute. Add soya sauce, red chilli sauce,green chilli sauce and a pinch of salt. Add the fried bread pieces and mix well to coat it with the sauce.

Garnish with coriander leaves and serve immediately.

Paneer manchurian



Ingredients

150 grams paneer cut into cubes
4 tbsp all purpose flour (maida)
4 tbsp corn flour
Salt to taste
1 tsp red chilli paste
1 tsp soya sauce
1/2 tsp green chilli sauce
1 onion cut lengthwise
1 capsicum cut lengthwise
Oil to fry
Finely chopped coriander leaves

Make a thick batter of cornflour, all purpose flour, 1/2 tsp red chilli sauce and a bit of salt. Dip the paneer pieces in the batter and fry them in hot oil till golden brown. Drain out the excess oil using a tissue paper.

Heat 1 tsp oil, add onions and fry them for a minute. Add capsicum and fry it as well for another minute. Add soya sauce, red chilli sauce,green chilli sauce and a pinch of salt. Add the paneer pieces and mix well to coat it with the sauce.

Garnish with coriander leaves and serve immediately.

Baby corn manchurian



Ingredients

Baby corn
1/2 cup maida
1/2 cup corn flour
Salt to taste
1/2 tsp red chilli paste
1 tsp soya sauce
1/2 tsp green chilli sauce
1 tsp tomato sauce
1/2 cup chopped capsicum
Finely chopped coriander leaves
Oil

Cut the baby corn into half lengthwise and again into half. Make a thick batter of corn flour, maida, salt and red chilli paste. Dip the baby corn in it and deep fry till golden brown.

Heat 1 tsp oil, add capsicum and cook for a minute. Add the soya sauce, green chilli sauce and tomato sauce to it. Add a bit of salt and baby corn to it. Toss it to mix the sauce well with the baby corn.

Garnish with coriander leaves and serve immediately.

Idli Manchurian




Ingredients

4 Idlis (batter recipe)
1 onion chopped lengthwise
1/2 capsicum chopped lengthwise
2 tsp oil
2 tsp tomato sauce
1/2 tsp red chilli sauce
1 tsp soya sauce
Finely chopped coriander leaves

If not diet consicious, deep fry the idlis till crispy brown. Else, roast them on a tava with a tsp of oil.

Heat a tsp of oil, add onions and capsicum. Fry for a minute and add the sauces to it. Since idlis already have required salt, no need to add more. Finally add idlis cut into small pieces and toss well.

Garnish with finely chopped coriander leaves and serve hot.

Alu Manchurian

Ingredients

Potatoes cut into cubes
1 cup maida/all purpose flour
3 tbsp corn flour
Oil to fry
Salt to taste
1 capscium cut into pieces
1 tsp green chilli sauce
1 tsp red chilli sauce
1 tsp ginger paste
1 tbsp soya sauce
2 tsp pepper
Finely cut coriander leaves

Mix the potato cubes, corn flour, maida, salt and pepper by sprinkling some water. Deep fry it and drain out the excess oil on a tissue paper.

Heat 2 tsp oil and add ginger paste, capsicum and cook for 2 minutes. Add the sauces, pepper, little salt and mix well. Add very less water and allow it to cook for 2 minutes. Switch off the stove, add coriander leaves and fried potato pieces, Mix well and serve immediately.

Veg Manchurian



Ingredients

Vegetables like carrot, capsicum, peas, cabbage
Salt to taste
2 green chillies finely cut
1/2 tsp ginger paste
1 tsp pepper powder
1 tsp soya sauce
1 tsp red chilli sauce
4 tbsp corn flour
4 tbsp cooked rice
Oil to fry
1/4 cup cabbage chopped (I used instead of onions..)

Steam the vegetables and squeeze out all the water from it to make it very dry. Add salt, green chillies, 1/4 tsp ginger paste, half of pepper powder, soya sauce, red chilli sauce, corn flour and cooked rice. Mix well and make small balls of it. Deep fry them in hot oil till golden brown.

To make the sauce...Heat 2 tsp oil and add the rest of the ingredients to it and cook well. To make dry manchurian, just add very little water, bring to a boil and add the balls to it and mix well. To make it a gravy, add about 1 cup of water, let it boil and then add a thin paste of cornflour with water to it. When it starts boiling, it will get thick. Add the balls just before serving.

Like Gobi Manchurian, the dry Veg Manchurian version is also an Indo-chinese starter. Sending this over to DK for the AWED: Chinese event

Gobi Manchurian




Ingredients

1 medium sized cauliflower, cleaned in hot water and cut into big florets
1/4 cup cornflour
Salt to taste
2 tsp soya sauce
2 tbsp rice flour
2 tbsp gram flour
1 tsp red chilli powder
1/2 tsp ginger paste
1/2 tsp red chilli sauce
1 tsp tomato sauce
1/2 tsp green chilli sauce
Oil to fry
Finely chopped coriander leaves

Mix rice flour, cornflour, gram flour, 1 tsp soya sauce, salt, red chilli powder and ginger paste with water to get a thick batter. Dip the cauliflower pieces and fry them in hot oil till golden brown.

In a seperate vessel, add the red chilli sauce, tomato sauce, green chilli sauce, 1 tsp soya sauce, coriander leaves and a pinch of salt and heat for a minute to mix it well and get a thick sauce.

Dip the fried cauliflower pieces in the sauce and allow the sauce to coat well on it. Serve hot with toothpicks to make it easy to pick it up and eat.
