EC: Tell us something about yourself

Lakshmi : I am a pharmacist by education, working in research, in health care and hospital industry. I am mother of two boys, who keep me busy all the time after my work hours. Cooking is not new to me as I am cooking from the age of 15. At that age perhaps I did not understand the logic of using many ingredients but just followed amma's instructions and helped her in her chores. My mother and grandmother were good cooks. My mother was very innovative in her cooking methods and recipes. As her health worsened her memory also went for a toss so I could not learn much from her, but she was(/is/will remain) my inspiration. I faintly remember her tips for cooking, but the taste of her cooking cannot be forgotten! She was multi talented. She had a big craze for handmade bags. She made bags from wires using crochet, she made idols using beads, flowers with satin cloth, made dolls for Dasara and very creatively recycled dad's old pants. I learned light music and still love to sing them, art and craft and blogging are my hobbies.

EC: Tell us something about yourself

Nithya: Hi All, I’m Nithya, software developer who turned into a blogger. I’m the blogger behind 4th sense Cooking. My blog child is going to be two in few weeks from now and I have thoroughly enjoyed the journey.

I also have keen interest in arts, crafts and photography about which I blog under Nits Arts and crafts. Managing blogs does need quite some effort and the fruits of the effort show up through comments and readership. Isn’t that amazing when what we do is of use to a lot of people around the globe!

I make it a point to post atleast a minimum of two posts a week. Now that I have completed around 270 recipes, I do a lot of research on new recipes and collect them from friends and relatives and give them a try.


EC: Who and what inspired you to start food blogging?? Which food blogs inspire you?

Nithya : My mom is my inspiration. She is the best cook I have ever seen. It all started when my mom asked me to copy down her cook book. Having an IT background, I really wanted to take it to the next step and so started a blog where I registered my recipes along with simple pictures. What started for a purpose has now become a hobby and in turn my passion as well.

I follow a lot of blogs lately and get loads of inspiration from the way they present their food, photograph it and also enjoy the lively way they write. To mention few,

EC: The pictures on your blog are so beautiful. Give us some tips for good photography.

Thank you EC for that compliment. I take immense interest in presenting my food in an attractive way and clicking pics of them. According to me, more than possessing a high tech camera, its all about having an eye for presentation and photography that is important.

When it comes to food photography, the presentation is really important. The photographs should invite the viewers to try the recipe.

My tips for good food photography would be –

• Good lighting - this is the most important factor which makes the photograph look good. So make it a point you take photographs in bright lighting.

• Clean set up – Never crowd the photograph with loads of properties and objects. Keep it simple and focus the attraction to the subject always.

• Colors – Choose background and bowl colors that compliment the food.

I use my Canon EOS1000D for my photography and recently got a tripod to help me out with nice clicks :-)


EC: Also your garnishing skills are excellent. Some ideas for quick and easy garnishing

Nithya : Thank you again .. I’m totally on the learning curve when it comes to garnishing.

The best way to decorate a food is to use the ingredients that are included in the dish itself. The raw materials can be displayed in a creative way.

In general a lot of vegetables resemble animals or anything else for that matter. Just observe the shape of the vegetable and try to carve out or dress it up like animals etc. which would make the dish look very attractive.


 
EC: How much technical knowledge does one need for successful blogging?

Nithya : According to me not much of technical knowledge is needed for blogging. Blogger platform is absolutely user friendly and helps even a novice to blog without any strain. Wordpress is equally good too.

Creating our own template or customizing the template would require minimal knowledge but loads of online tutorials are easily available for our rescue.

Anybody can start off blogging without any fear.


EC: You have a lot of baked goodies on your blog..Some tips for a newbie in baking and which recipe of yours would you suggest for a first timer.

Nithya: Baking is fun and quite easy once you start off and has been my latest craze. The understanding of measurements and certain methodologies would make baking breezy.

Tips:

• Start off with simple recipes that help you gain confidence.

• Measure the ingredients perfectly. Its best to have a set of measuring cups and spoons handy.

• Freeze the dough for some time before you make cookies. This is really a magical step for neat looking cookies.

• Never remove the cake or any baked goody from the oven just after you switch it off. Give it few mins standing time. This helps in good texture of the baked goody.

• Make sure your baking soda, baking powder and yeast are fresh when you use them in bakes. They are the key to success.

I would suggest my “Instant microwave cake” recipe for a beginner since its eggless, totally fuss free and cake can me made within minutes. J

Super blogger sunday: Padhu from Padhu's kitchen

Meet Padhu of Padhu's kitchen this week's edition of Sunday super blogger series. She has a collection of more than 200 recipes in about a year and half of blogging. EC: Tell us something about yourself and your hobbies

Padhu : An optimistic and a creative person, mother of 2 adorable children and a person with diverse interests willing to explore ideas and learn something new. My inquisitive mind has made me venture into various fields like waste management, art & crafts, organic gardening, Beauty, cooking, Yoga, web designing etc. I started my first website on Health and Beauty Tips  in early 2007 which focuses on Natural Health & Beauty Care.

I have also conducted hobby classes and art camps for women and children and my most unforgettable experience was conducting craft camp for the special children.

With respect to managing job and family, my family has always been my priority. Being a self employed woman, I am able to adjust the timings to suit my needs. Mostly I work after my kids leave and make it a point to be with them when they are back.

My food blog was started in August 2009. I make it a point to post once or sometimes twice a week. I do not cook specially for the blog but only post recipes of what I cook for my family. But I do bake specially for the blog.

EC: Who and what inspired you to start food blogging?

Padhu : My children used to appreciate and love my cooking very much. In order to make them happy, I started cooking variety of dishes for them. They loved it very much. I wanted to maintain an online diary of those recipes tried and tested in my kitchen, so that they could refer later, when they settle down elsewhere. Thus Padhuskitchen was born. What started as a hobby has become a passion now.


EC: What changes has blogging brought in your life ?

Padhu : Although I have attended baking classes before marriage, being a fitness freak I have never shown much interest in it. But now after seeing all the blogs with so many cakes and muffins, I am tempted to bake now. I have learnt many things about international cuisine and baking. It is nice to keep in touch with people of same interest.

EC: The pictures on your blog are so beautiful. Give us some tips for good photography

Padhu : Thank you very much for your compliments. At present I am using a Sony DSC –T20/T25. When it comes to food photography, I am just a beginner. I make it a point to click pictures during day time in natural light and never use flash.

For me more than food photography, I love food art, fruit and vegetable carvings and food presentation. I feel presentation of food is as important as taste and smell. I will share with you a few tips on garnishing from my experience.

First of all you don’t have to be a chef or an expert in the field to make garnishes, anyone can do it.

1. Make sure your garnish matches with your dish. Use only the ingredients you have used in the dish for garnishing. For e.g. you can garnish carrot rice with 2-3 simple carrot flowers.

2. Make it as simple as possible. Do not over do it or clutter the plate with decorations. A simple tomato rose garnish for a raitha or salad makes it look appealing.

3. Make the plate look colorful - Mix and match colors

A colorful plate looks pleasing and inviting to the eyes. For salads, you can mix carrot (orange), tomatoes (red) and green bell peppers to make it look attractive. Just sprinkling coriander leaves over tomato rice makes it look colorful.

4. Fruit salads can be kept in a melon basket or a pineapple boat at the centre of the table.

5. As far as possible use edible garnishes.

6. Use white plate for colorful dishes and a colored plate for light colored dishes.

7. You can cut vegetables and fruits into different shapes using cookie cutter and serve to make it more attractive.

With little imagination anyone can make the food look presentable and attractive.

EC: Tell us about your "How to" series. What are your recipe sources and plans for your blog for the year? 
Padhu : “How to” series was mainly meant for a novice who has never tried cooking before. I also have plans to share very simple and basic recipes.

Most of the recipes in my blog are passed on to me by my mother and aunty. Some of them are from friends, neighbours, TV shows and magazines. I love traditional food very much and I feel it is losing its importance now a days. So I want to bring back traditional recipes, festival recipes and also have plans to post quick and healthy Indian recipes which can be prepared in a jiffy during the morning hectic hours.

EC: Can you give some tips for new bloggers to make their blogs popular?

Padhu : Have your own style, stay focused and most important is you must have passion and interest and of course persistence is also required.

EC: Your favourite vegetarian recipe

Padhu : Love all the recipes posted in my blog. Since I have to choose only one recipe, I am going for Tomato soup

Super blogger sunday : Sharmilee of Sharmis passion

EC: Tell us something about yourself

Sharmilee: I am Sharmilee, mother of a 1.5 yr old daughter living in Coimbatore with my family. I started Sharmis Passions 2 yrs back as a platform for the passion for clicking and cooking. But to be frank when I started this blog I cooked to click but now am interested in both clicking and cooking :)

Attimes it is tough to allot time for clicking with the 1.5 yr old hyperactive kiddo but still with my family's support and my passion for food photography it gets going. I struggle to take things at the last minute....So I usually preplan things and have atleast 10-15 posts in drafts. So its easy to post in different categories and I try to post atleast twice a week.

The main reason for me to start a food blog was the passion towards food photography and secondly I can say I wanted to have a record of all the traditional and new recipes with proper measurements. The first thing I do in the morning is check my dashboard and it brings a wide smile on my face when there are comments waiting for me to be moderated.


EC: Who and what inspired you to start food blogging ?? Which food blogs inspire you ?

Sharmilee: Once when I was searching for a recipe and that was the first introduction to food blogs to me. When I was in my 2nd trimester I wanted some distraction apart from my job so chose to create a food blog as I was keen in feeding healthy and tasty food for my family.


EC: The pictures on your blog are so beautiful..Tell us something about your food photography lessons and some tips for our readers

Sharmilee : Thanks for your words!! I browse through http://www.digital-photography-school.com and get tips from there. I really feel very happy when people appreciate my photographs because I spend so much time in clicking(sometimes the clicking time is more than the cooking time :))

I've just bought my DSLR and still in the learning stage but with what I have learnt I can give u few tips:

1. Never use flash especially when food photography is considered.

2.I believe in taking a decent picture than spending more time in editing. Attimes when my picture isnt

satisfactory I try to make the dish another time for clicking sake because first I should like my pic before presenting it to others.

3.Always keep the food near by a window where the light is neither harsh or dull. Take the food in different angles and take more pictures and choose the best.


EC: You have baked so many goodies..some tips on baking and which recipe of yours would you suggest for a first time baker

Sharmilee: I am still a beginner in baking. Will you believe I bought an oven only after Sharmis Passions was born and yes I bought it specially for my blogs sake and of course now my family enjoys my baked goodies too. I would suggest Simple Moist chocolate cake without eggs as this is the top popular posts in my blog and also many of my readers and friends have tried this and have given me good feedback.

With what I've learnt so far :

Measurements are very important in baking, eyeballing wouldn't do any good in baking at least when you are beginning

Always start with small measurements as I still follow that. And try to stick to the orginal recipe for few trials then experiment on them.

EC: Do you think blogging has widened your perspective and exposure?

Sharmilee : Of course yes I love my identity as Sharmilee from Sharmis Passions and I thoroughly enjoy blogging, cooking and clicking for that sake. I would say that it has made the lazy me cook and try out new recipes as well. And has earned me so many blogger friends worldwide and now few of them are close too.

EC: Tell us something about yourself

Nivedita: HI all, Its difficult to talk about myself :-) but feel happy to do so. Let me introduce my life in short to you all. Don't get irritated with so many I's

Being a Civil Engineer, instead of construction and estimation, I am always happy in creating new dishes and using the measurement spoons for it. :-) I love to bake a cake or make a dosa for my family rather than construction. My first love is reading and I read while I cook too. And the second and again first love is Cooking. Entered the kitchen at the age of 7, still love to try new things. I love to dance(finished 2 dance exams), I was a state level basketball player, I love jogging, yoga and new interest : Karate

I have tried writing down my feelings in my another blog, which introduces me as a writer or poet. Still trying to improve in it. Love to be a fish in the water(Swimming is another activity I love). I love to do painting, I love music, I love everything. My only problem is " I get adjusted under any circumstances, with any thing or any where ". I love Maths, yes, I love to play with numbers. (done Vedic Maths course)

Computer is my another baby which I always love to play with and experiment with (done many courses including hardware, I can repair the computer also) now, I Love Blogging :-) My blog is officially started in 2007 but my first post published was in 2009 March :-) I was too scared or lazy or was not sure about my getting success here. I have tried and shared many recipes in my blog Nivedita's Kitchen and tried to share my feelings in another blog Me and my thoughts!!


EC: Who and what inspired you to start food blogging ?

Nivedita: During childhood, cooking was my necessity. Now, there are many people who really inspire me to try cooking new food. My daughter, my blogging friends, great chefs from all over the world are few among them.


EC: How do you think blogging has changed your life ?

Nivedita: Yes!! Blogging has really changed my life to the maximum. I have entered the totally new world where I have got wonderful friends. I have become more confident about new cooking, I have taken risks to learn very new things. Blogging has helped me to improve my writing skill. It has given me a wonderful social network. I feel proud to say "I own a blog where I have more than 300 recipes which have been tried and tasted by me."

EC: Your views on plagiarism and how can we fight it ?

Nivedita: I hate the word "Plagiarism".  People who do this are useless. I really get irritated and very angry with those. The original work has to be appreciated and should get the credit. I am not sure about stopping it, But we all together can fight against it by spreading the awareness about Plagiarism in our blogs by blocking that person from entering into any contest and if possible by complaining about that person.


EC: How do you manage balancing your job, family and blogging ?

Nivedita: Being a working mother of two kids, and presently a single parent (my hubby stays abroad), managing everything from groceries to vehicle servicing, is not an easy task. But, I believe in my own quote "when you are dedicated, you always have time"

EC: You have tried so many variety cuisines...which is the easiest and tasty..also which is your favourite ?

Nivedita: Very very tough question. I love everything that is eatable or edible. I really can not decide my favorite, easiest and tasty food. Most of my posts in my blog starts with a sentence "I love this one :-) "

However, I would like to tell about one recipe which is really very easy and very tasty. Its Chapati Poha, which is prepared using left over chapatis. Its yummy, healthy and very tasty food.

EC: Your favourite vegetarian recipe

Nivedita : Again the tough question. Here I don't want to cheat my self. I love to eat anything, my favorite is raw food, believe me, I can stay only salads for many days.

EC: Tell us something about yourself


Prathibha : I am an electronic engineer by training and worked as a DSP programmer for over two years in a reputed S/W firm in Bangalore. Post marriage, I had to shift to HK where my hubby was working with an investment bank. We though decided to move to India after an year and that’s when I decided to convert my love for cooking to the world of internet. My blog is now two years old and has seen lots of mid course corrections in terms of the kind of photography and look and feel of the blog- something where lot’s more needs to be done. When I started off with it, it was more of a creative pursuit but now it’s become more of an extension of my life. I think more than the posts I write on my own blog, I spend quite a lot of time wading through other food blog’s as I enjoy learning’s new cuisines

EC: Who and what inspired you to start food blogging ? Food blogs that inspired you

Prathibha : I am a foodie and that’s possibly the key driver for my association with the food blogging world. As a child too, I used to watch cooking shows and religiously note down recipes – and the compilations has been carefully preserved. I infact, still refer to those notes for idea generation. My love for food in real life even triggered me to play the game called ‘Cafe World’ in Facebook, where I used to cook for unknown animated visitors to the cafe J. I thoroughly enjoyed the game, as one can change the layouts and add new decorations to the cafe by earning more cafe points. We, a bunch of food bloggers even competed to reach the levels faster and it was really fun to play that game.

As far as inspirations are concerned...

The first of the sites that I used to refer during my college days was a website called, SitaGita.com for my occasional special cooking. Post marriage, I started learning new recipes from my friends, mom, MIL and then got hooked on to cooking as a hobby – and in order to further strengthen the base of recipes that I had , I used to surf sites and was amazed to see the ocean of recipes in blogosphere. My hubby tells me that if only my MIL had access to internet, he would have been spared the nightmares of experimental cooking that the output that he got fed on at times! That’s possibly another trigger – ensure that what I know and I have learnt, I share with others, so that my experiments could benefit others.

With regards to what blogs inspired me in the recent times- one of the initial sites I used to visit often was, aayisrecipes.com and then slowly by hopping through various blogs, I ended up on seema’s recipe junction, which is unfortunately now a private blog.

EC: How do you think blogging has changed your life ?

Prathibha : Blogging has added colour to my life and I think our generation is lucky to have been provided with such a powerful tool to reach out to millions of individuals globally. My MIL used to tell me how difficult it was for her to learn cooking and get hold of various recipes and it was always more of learning through talking to others – which always is a tedious and long process. I think more than changing my life – It gave me an opportunity to experiment with cooking various kind of foodstuffs – and yes sometimes my hubby gets frustrated when some of the experiments fail and he becomes one of the victims of the food to be that has to eaten. While on a serious note , I think its fun blogging and I enjoy it to the fullest.

EC: You have tried various cuisines -regional as well as international..which is the simplest according to you and which is your personal favourite ?

Prathibha : I have explored several international cuisines stemming from as far as Italy to China, Egypt, Mexico, Spain etc but I think regional cuisine is the simplest . I am yet to try more of international cuisines but the variety of vegetarian food is more in India, in my view. I prefer a simple south Indian meal which consists of curry,sambar and rasam with rice anytime for lunch and especially I crave for them after a long holiday.

EC: You seem to bake a lot ... which of your recipe would u suggest for a newbie in baking to try and any tips on baking

Prathibha: All the baking related recipes that I have posted on the blog are actually for newbie’s as I myself am new to baking . I think the biggest thing that one should look for is get access to good yeast to make good bread and also follow the precise measurements for baking cakes,cookies and breads. I get few ingredients from HK or Singapore as I find it difficult to procure them in Mumbai.

EC: What are you recipe sources and do you cook specifically for the blog ?

Prathibha: Yes , several times I cook specifically for the blog especially to catch up the deadline for events. Recipe sources include those that the recipes I have filed from childhood – through various TV shows, from mom, aunt’s and MIL, friends, my big collection of recipe books and fellow bloggers

EC: Your favourite vegetarian recipe

Prathibha: There are many recipes which are my personal favourites and are even posted in my blog. My personal favorite is a food called “shastralu-freshly pressed string hoppers with panaka and the lemon variety of its”-which is our community special and it is still not in my blog, as the best is reserved for the last.As I do not have the instrument to make them, I indulge on them when I go to my Mom’s place. I will try to take the photographs next time I visit my mom’s place and will even post the recipe. Some of the other foods which I like are Billakudumulu/Rice Rava Tikkis-again our community special, Pav Bhaji, Golgappe-my all time favorite, Rava Idli-Potato sagu, Rava Dosa, Mysore Masala Dosa. As EC has asked me to share one, I have given the link of Mysore Masala Dosa which has got the highest reviews and many complements.

Varunavi: I am a management graduate from hyd and a SAHM. A banker by profession and left my job after getting married and relocated to Oman and then to Dubai. Now SAHM for two kids aged 7 and 3 ½.

I try to post regularly say a gap of 4-5 days between each post. And most of the posting I do at night when kids are sleeping.

EC: Tell us something about you

Padma: First of all thanks to "Simple Indian Food" for featuring in their series 'Super Blogger Sunday". I am really honored.

I was born and brought up in Bangalore, Karnataka. Mother tongue is Telugu and native near South Tamilnadu. So was exposed to cuisines from all over these places right at home. I am a home maker with two kids. Cooking is my passion and always loved collecting recipes from magazines, TV Cookery show and noted them down in a book. Later noted down many recipes from mom and grandma. That book was in great demand right from college and was always under circulation. Luckily was able to get them back by the end of college.

EC: Tell us something about yourself

Laavanya: I'm Laavanya, currently residing/working in the US and originally from Madurai, India. We (my husband and 2 kids) enjoy food and my daughter in particular loves to help me cook/bake. Food has always been well appreciated in our family and both my parents are wonderful cooks. I've always had an interest in cooking from an early age but got to develop it only after I turned 20 and found out that I love cooking & trying out new recipes. Initially I had just one blog (started June 2006) that chronicled happenings in our life & my daughter's growth and gradually I started to incorporate food related posts in that. After getting acquainted with the large food blogger community, I created a separate blog for my recipes (started June 2007) and transferred the previously published posts to the new blog 'Cookery Corner'. I thought that it would be great to have a online repository of my recipes (which was initially in a file box).. I'm thankful because my blog has given me a lot of good friends in the food blogging world and so many awesome ideas & recipes that I've incorporated. The frequency of my posts has reduced considerably over the last year or so due to time constraints, but I intend to post as often as I can. Most of the time, what I post, is either part of our standard meal or something new I tried out... only rarely do I cook specially for the blog.

EC: Tell us something about yourself 

Chitra: First I thank EC for giving me this renowned title & a chance to tell about myself to this blogging world.

I am a home maker with cooking as passion & avocation. Before my marriage, my lovable mom never allowed me to enter the kitchen. So I cooked only at exigency and that too very simple dishes.

After my marriage, to my luck I've got my MIL equivalent to my mom who never enjoined me to do the house holds. I learnt and did everything out of my own interest and slowly started cooking.

Now iam a full time cook experimenting all the dishes of my MIL & MOM for my caring partner. Also I am the mom of a 4 yr old cutie who keeps me occupied round the clock.

I started my food blog on the eve of new year 2008. Its just completing its 2 years. As everbody says I too consider this blog as my diary / record of recipes for which I get good results. Sometimes I try some recipes from other blogs and I treasure them in my blog. Nowadays I am not blogging actively like before due to some personal reasons.

But I make sure I post atleast 2-3 recipes in a month. I am doing my best to post more n more recipes in future and planning to do some changes in the way I present my blog. Other than blogging, I have interest in reading magazines , shares & MFs.


EC: Who and what inspired you to start food blogging ??

Chitra: My husband is the sole responsible & motivation to start my blog. He suggested me this catchy title & taught me all the technical basics. Whenever I want to try some new recipes, like u all I too go for the google search..One such recipe I wanted to try was gongura thogayal which I got from srivalli's blog.

From then I started to visit her blog for various recipes and tried at home. So I should say her blog is also an important factor to start my own. Thanks a lot srivalli for being my inspiration :).

One more person I should mention at this point is my SIL..I dont want to say much about her blog. Its name says the fame.she shared me some useful tips in photography.

I think my pics are somewhat looking better just becoz of her ideas. Thank u so much raji :)


EC: How do you think blogging has changed your life ?

Chitra: Blogging has improved my cooking skills, came to know different cuisines and above all it has fetched me so many encouraging friends.

It makes me spend my afternoons in an useful way..This is the second thing that keeps me busy next to my doter.:)


EC: Which is the dish that is a hot favourite among ur family and friends..Any cuisine or recipe that you have been wanting to try since long.

Chitra: I think my thogayals are the favorite dishes among my family members and friends. But my husband loves all the sambhars I make for breakfast / dinner. He used to say I am good in making tiffin varieties ;)

As I have posted so many traditional recipes from my MIL & mom's kitchen, I crave to try baking stuffs .I really want to post some cookies, cakes & pastries in my blog. I hope this new year brings my wishes come true :P


EC: What are the sources of your recipes..Do you follow them as it is ??

Chitra: Most of the recipes are from my MIL & MOM. Other than this I try the recipes of my friends,cookbooks & blogs.

I cook & blog all the recipes that suits my family's taste. I adjust the quantity of ingredients given by others especially the spices.


EC: Have your recipes been copied anywhere without your permission..How would you deal with plagiarism ??

Chitra: No, to my knowledge nothing have been copied without my permission. Of course plagiarism is an offence. Its like stealing others hardwork. But if i find anything copied from my blog , I dont feel angry or tempestuous. I think its of no use. Anyway once copied is copied.

I convince myself saying somebody likes my recipes and I had helped them to get name & fame.

Plagarism cannot be prevented or stopped. Copycats should realise by themselves & change on their own..Till then it will be there somewhere in a corner ..( friends , please dont throw stones on me for this reply;) )


EC: Your favourite vegetarian recipe
Chitra: Our favorite recipe is Ragi vermicelli - Sweet & spicy version. My hubby hates ragi but he loves to eat this vermicelli at anytime.

Meet the talented Nandini of Nandini's Food page in the Super blogger series. She has tried various regional as well as international cuisines. The blog is nearing almost 500 recipes in a little more than 2 yrs of blogging.

EC: Tell us something about yourself

Nandini: First of all, thank you for choosing me for the interview and I’m really honoured. I am an ‘at home’ mom of two beautiful kids. My main passion is cooking healthy and tongue-tickling dishes. I’m obsessed with other activities like reading novels of the real-life and fiction genre. But ironically, my life is like that of one for I never have time to myself and have to help my children in their homework and busy with other work.

My initiation of blogging was in September 2008. At first, I started blogging my recipes on the net to share my family’s tastes with the rest of the world. Then I saw that there was a large group bloggers on the net publishing their recipes. I also found myself getting involved with other Indian food bloggers. I update depending on how interested I am and what my mood is.

EC: Who and what inspired you to start food blogging

Nandini: I unintentionally (and accidentally) started blogging when my loving and caring husband suggested so. I developed more interest in pursuing diverse cuisines.

EC: You have been blogging for more than 2 years and nearing almost 500 recipes. Do you cook specifically for the blog? What are your plans regards your blog for the coming years?

Nandini: Precisely. On most of my posts, the photos and recipes are either actual lunch or dinner. Sometimes, I do cook specifically for the blog keeping my family in mind. Some of my recipes were learnt from my mom and some from huge collection which I’ve accumulated over the years. I plan to post more diverse recipes for the coming years after racking my brain.


EC:  Do you think blogging has widened your perspective and exposure?

Nandini: Absolutely. Blogging has changed the way we gather information. It helps you gain new techniques and understand food culture from fellow bloggers.


EC:  Have your recipes or pictures been copied anywhere without your permission? How would you deal with plagiarism?

Nandini: I had been a victim of plagiarism once in the blogging world. I got over this problem and considered it a common act happening ubiquitously. Obviously, the best way to deal with this problematic nuisance is to take necessary precautions like watermarking, copyright etc.


EC:  Have you encountered with something interesting after you started blogging?

Nandini: Interesting…Yes. There have been a lot of incidents. One of them involved my husband. My husband never mentions my blog to his friends. One day, I posted a cupcake recipe. That particular day was my hubby’s b’day. One of his friends was surfing through my blog without knowing it was mine in the beginning. He saw the date I posted the recipe and H’s b’day date. To confirm himself, he asked my husband, “Is this your wife’s blog? How was the birthday cupcake?” Then my hubby replied that I’m running the blog. This was one such interesting incident that I experienced.

EC:  Your favourite vegetarian recipe

Nandini: My favorite recipe is Falooda which I always love to guzzle. But not in this bleak season. I made my own Vanilla ice cream recipe which I actually forgot to mention in the post.


Super blogger Sunday: Lata Raja of Flavours and Tastes

This week's featured Super blogger is Lata of Flavours and Tastes blog. In almost one and half years of blogging, she managed to post recipes steadily without any break and has more than 200 of them on her blog. She couldnt post anything since the past two months as she has been waiting for her things to be shifted to her new place. She is very active on facebook as well..Hats off to her enthusiasm..


EC: Tell us something about yourself

Lata: I can happily call myself a foodie…so long as it is vegetarian, I do not fuss about food. I used to be ‘a just cook and eat’ person for many years. Later when friends found my recipes interesting and appreciated, my cooking took a different dimension. My blog is just about two years old. It started from the point where I was sent the link to Laavanya’s Cookery Corner.

Around the same time, my daughter and her friends were planning to cook for themselves in University. Thus, as a means of giving them recipes, I started blogging. Then for a few days it was an addiction. Currently, I have enough free time, that I can dedicate to cook and write what I cook.

Initially, I posted almost every day, then slowed down. Currently it is on hold and have not posted anything in the past two months. The recipes are usually regular ones, but I do cook sometimes with a post in mind.

EC: Who and what inspired you to start food blogging

Lata: My husband was and is, the one who inspires me to do this. It was him who went about shaping the blog. Then, my daughter, who is game to try any recipe. I must acknowledge other food enthusiasts who cook and share their recipes. They are the best source of inspiration. Due credit is to Laavanya, who introduced this activity through her blog.

EC: Do you think blogging has widened your perspective and exposure

Lata: Most certainly, it has. Cooking was just about a regular day-to-day activity until I started writing and sharing recipes. Now I take due care about measurements and procedures. I try to concentrate on small details lest I misguide someone who is hoping to try my recipe. And even my everyday cooking has evolved inspired by many other bloggers. Even small changes to certain recipes bring about variety.

EC: How much technical knowledge does one need for successful blogging

Lata: I think if you have basic knowledge, it is fine. All these sites are mostly user -friendly. The best thing is you can ask a fellow blogger to help out and get things in place. Yet, if you possess additional skills, it is so much more fun.

EC: You have baked a variety of bread and cookies ...Any tips on blogging and the recipe you will suggest to a first timer….

Lata: I try to follow the given recipe and go about it when it comes to baking. I hardly try making changes on my own. Once, you are confident, you may try to make slight changes .

EC: Your views on plagiarism and how can we fight it

Lata: It is seriously an offense to simply copy and take credit for what is not your work. If someone can go to lengths of copying posts and pictures, it takes just about an extra minute to credit the source.

As far as food is concerned, many recipes are handed down or tried from other sources. So there may be similarities. But copying right off someone’s pages and taking all credit is quite unpleasant.

EC: Your favourite vegetarian recipe

Lata: Thanks EC for giving me this opportunity.
I would like to share Aval Laddoo with readers of this post.

Ingredients:

1 cup thick beaten rice/aval/poha
2/3rds of a cup powdered sugar
¼ cup ghee
3 pinches of powdered cardamom

Method:

Toss the beaten rice in a large flat plate and remove scum and dust.
Place a heavy rounded pan on the stove. Add few drops of the ghee and a hand ful of the beaten rice.
On a low to moderate heat toss it around until they puff slightly.
Do this in small batches to evenly puff the entire quantity.
Once all of the beaten rice has been puffed, allow to cool. Then pulse it to a coarse powder as in semolina consistency.
In a bowl mix the sugar, cardamom powder and the pulsed poha. Mix well to blend evenly.
Heat the ghee until warm and mix it to the powdered ingredients. Quickly shape balls.
It would be easy to shape while the ghee is warm. So if making larger quantities, it is advisable to do in batches.
I have used the red poha for more fibre content.
You may make the same using part beaten rice and part ground almond powder.

Simran: I have been interested in cooking for as long as I remember. In fact, I have notebooks with recipes that date back to my high school days. Then, 5-6 years back, I started reading food blogs. Then around 3 years back I thought, I should do this myself and started writing Bombay Foodie.

EC: Tell us something about yourself

Usha: Thank you EC for giving me this opportunity. My blog Veg Inspirations is almost 2 years old, it turns 2 this May. I started the blog with an idea of sharing some of the healthy recipes that I make in my kitchen. I have always been very health conscious but in the last few years I have really ramped up my efforts to eat right. I make a special effort to use healthy ingredients like oatmeal, barley, ragi, quinoa in my cooking now and I try and cook as low fat and healthy as possible. I find that there is no better way to include healthy grains in our diet than to use these items in our usual day to day recipes such as idlis, dosas, soups, bread or even cookies. When it is seamlessly incorporated in our daily food, we never notice that we are eating something healthy and it becomes much easier to maintain healthy eating habits and a healthy lifestyle over a long period of time. I blog about the simple healthy day to day recipes that I try in my own kitchen and that is liked by my family and friends.

EC: Who and what inspired you to start food blogging ?

Usha: Food blogging happened to me quite by chance, I was always been trying out new dishes and new ideas in my own kitchen and one day it suddenly struck me that a blog would be a good place for me to record some of these experiments. My husband also encouraged me a lot to give it a try and I decided to take the plunge. Once I started blogging, I got completely hooked on to it and now it has become a part of my life.

EC: You have a lot of vegan recipes on your blog..How do feel cooking vegan food and do you wish to turn completely vegan in the future..If so why ?

Usha: I have always been a vegetarian and consider myself a sometime vegan. In regular day to day recipes, it is easy to make vegan recipes as most food I cook do not require cheese or other diary products. But baking usually requires a lot of diary products, nowadays when I bake, I try and veganize most recipes and try and avoid eggs and butter and substitute with healthier choices like flax seeds and vegan butter or oil. I would like to cook vegan whenever I can, as it is more humane, as to the future and whether I become completely vegan, only time will tell :-)

EC: You seemed to have tried a various Indian regional cuisines and International cuisines as well..Which is the simplest of them all and which is your favourite ?

Usha: I find most recipes, both Indian and International simple. As to favorites I have to say that since I have grown up eating Indian food, I find Indian cuisine to be the most comforting.

EC: Which recipe would you recommend for a first time baker and which are the important points to remember while baking

Usha: My recommendation for a first time baker would be to start baking with something simple. Something like this wheat barley cracker which is as simple as making roti or this basic simple pav would probably be a good place to start. At the beginning when you are new to baking I would suggest sticking close to the recipe, deviating very little and keeping the proportions as much as possible. After getting the hang of it and understanding the role of each ingredient in the final product, it becomes much easier to create entirely new recipes and making major changes to existing recipes.

EC: What are your recipe sources ?

Usha: Some of the recipes on my site are ones that I have learned from my mother in law, some from friends and other members of my family, some from books and some that I create entirely on my own. Most times these days, I just kind of create recipes from the top of my head, depending on the ingredients I have on hand.

EC: What important changes has blogging brought in your life ?

Usha: One of the most important facets of blogging is this wonderful blogging community that I have gotten acquainted with, there are so many wonderful bloggers out there who are creative and who share their passion, their ideas and spend time visiting sites and in encouraging others too. The other thing is that even though I have always been quite open to experimenting with food, I find that blogging has helped me to push my boundaries a little more and become a little more daring with my experiments in the kitchen.

EC: Your favourite vegetarian recipe

Usha: It is very difficult to decide on one recipe that is my favorite vegetarian recipe, but if I had to I would choose this Instant Ragi Oat Idli because it represents best, the type of food I love most, which is food that is very healthy, very tasty and simple :-)

EC: Tell us something about yourself. How do you manage your blog and family ?

Vaishali: I've been writing Holy Cow! for just over two years now. The blog is a result of three of my great passions-- eliminating cruelty toward animals, writing, and cooking delicious food, in that order. I have always loved animals but I thoughtlessly ate meat and milk products almost all of my life. When I got involved with animal rescue, I realized that the dogs and cats I was saving were no different from the chicken, goats, pigs and cows who were suffering lives of abject terror and cruel deaths in factory farms which supply most of the meat and milk we consume today. So I gave it all up, but I was more determined than ever before to eat well. I started to experiment with vegan cooking and baking and found that not only was it an easy transition, but everything I made was better tasting and better for me than anything with animal products in it. Through my blog, I wanted to share this discovery and hopefully get readers thinking about eating compassionately.

I work full time and I have a huge family-- my husband, Desi, (who shoots all the pictures for Holy Cow!) and my three dogs and two cats, all rescues and all wonderful, so keeping up with the blog definitely requires a lot of juggling. But when you love blogging as much as I do, you make time for it. My posting schedule changes based on how busy I am at work or at home, but if I feel myself slackening, I remind myself that there are readers who look forward to seeing new material on the blog-- even my long, rambling posts on animal issues and things unrelated to cooking :).

EC: Who and what inspired you to start food blogging ?? How did you come up with the name of the blog ?

Vaishali: I was seeing a growing number of food blogs on the web, and there was one I really liked-- Nupur's One Hot Stove -- because her recipes gave me a chance to reconnect with my Maharashtrian heritage. (My mom, who died when I was seven, was a Maharashtrian.) But I didn't think about blogging myself until much later because I had a very busy career as a journalist, and writing a blog seemed like too much work.

Desi, who is the wittiest man I know, came up with the blog name which is a tongue-in-cheek play on the Hindu belief that cows are holy even though dairy cows in India are among the most exploited and abused animals. The dangerous practice of factory-farming dairy cows in inhumane conditions has migrated to India. In tabelas, which have replaced family dairy farms all over the country, cows and buffaloes stand all day in their own feces and suffer from untreated diseases. They are confined in small stalls where they can barely move, and are pumped with hormones to make them produce more milk. They are forcibly impregnated so they will keep giving milk.

The average life of a cow is 14 years, but a dairy cow is killed for meat and leather at the age of 4-- even in India. So anyone who thinks that by buying milk they are not contributing to animal cruelty and death is sadly mistaken. And through Holy Cow! I try -- gently-- to educate readers about this.

EC: How do you think blogging has changed your life ?

Vaishali: It has definitely changed my life for the better. I always loved to cook, but when I became vegan and started to share my recipes, I became more experimental. I found that instead of restricting my diet, my new lifestyle as a vegan had opened me to all kids of amazing and healthful new ingredients. Not only did I feel better about leading a compassionate life, I was also healthier. My blog was my way of reaching out to anyone who would listen and say, hey, you might enjoy this too if you gave it a chance.

Through my blog I also met lots of readers and other bloggers who I really grew to like (one reader, Roshani, who also lives in Washington DC, is a close friend now after we met through the blog). Ever so often a reader will write in and say that Holy Cow! inspired them to give up milk or eat less meat, or at least to start thinking about it, and it makes me happier than I can say.

EC: Have your recipes been copied anywhere without your permission..How would you deal with plagiarism ?

Vaishali: Plagiarism is a huge problem for bloggers, and of course I've run into a few copycats-- two just recently who copied my vegan challah bread recipe. I usually write to the blogger/writer asking them to take down the recipe or photograph or to credit Holy Cow! and some will do so, but there are others who refuse to budge. I believe there are some avenues, like writing to Blogger or Wordpress to complain about the plagiarizing site, but I haven't really tried that to see if it works.

EC: You seem to have explored various cuisines, vegan recipes and also some ayurveda related recipes..Tell us something about it and your favourite among them

Vaishali: I love cooking food from around the world and I encourage readers and other bloggers to do it too through my recurring food event, It's A Vegan World, where we explore cuisine from one country in one month. I love Mexican, Middle Eastern and Caribbean cuisines because they are vibrant and full of complex flavors, but at the risk of sounding biased and unadventurous I must say that it is Indian food that gets me the most excited. My tastebuds are just too stubborn, I guess :)

When I cook, I am always mindful of the fact that the food we eat is the foundation for our health. Most of us are careful about what we put down the garbage disposal, so shouldn't we have a higher standard for our bodies? With everything I cook I try to ensure that it is not just healthy but well-balanced nutritionally. I find cooking and eating the Ayurvedic way fascinating because it talks about balancing flavors and eating to serve your particular body type, which is great.

EC: What are your recipe sources ? Do you cook specifically for the blog ?

Vaishali: I tend to come up with a lot of original recipes because I have been cooking a long time now and I like to think I have a good sense of which ingredients work together, and which don't. But I do, of course, have my favorite cookbooks, including the baking section of the Joy of Cooking which -- in case anyone is not familiar with it-- is a collection of virtually every American recipe you can think of. I have veganized many, many cake, bread and cookie recipes from this cookbook. I also love Madhur Jaffrey's World Vegetarian and some of Vimla Patil's cookbooks, but if there was one book I would never give up it is my tiny, well-thumbed copy of Vedavalli Venkatachary's How to Cook. After I married a Tamilian, living so far from all my Tamil relatives, this was the book that helped me find my way from his heart to his stomach :)

In the beginning, I would share what I had cooked for my family on my blog, but now I consciously experiment more so I can post interesting recipes for my readers. I also get recipe requests from readers sometimes that I try my best to fulfill.

EC: Something interesting that you encountered with after you started blogging

Vaishali: Being connected with-- and feeling close to-- a number of people I've never actually met, and probably never will. Food bloggers, and some of our readers, are a rather close group and after a while people start to feel like old friends even though you wouldn't recognize them if you saw them on the street. There's something weird but wonderful about that!

I am also constantly surprised by the generosity of all the creative food bloggers out there who share their own recipes, including those passed down through the generations in their families. It's a gift because I have run into people (even some I know well) who will simply refuse to share a recipe saying it's a family secret or something like that. I find that odd because if you have a great recipe, why not share it so everyone else can enjoy it too? You know, make the world a more delicious place. Food bloggers really get that.

EC: Your favourite vegetarian recipe

Vaishali: It's hard to come up with just one, but for reasons of taste, sentiment and popularity, I'd choose My Dad's Not-Mutton Mushroom Curry. The inspiration for this dish was a meat curry my father would cook for the family on Sundays when I was growing up, and which I loved. It also is a great example of how to go meat-free without sacrificing the flavors you love.
