Sattu maavu/atta burfi


Ingredients

1 cup sattu maavu/atta (nutritious flour made of various grains, nuts readily available in stores)
1/2 cup milk powder
3/4 cup sugar
1 tsp cardamom powder
1/2-3/4 cup ghee

Heat the sugar with some water to get one string consistency syrup. Slowly add in the flour and milk powder and keep stirring well without lumps. Add cardamom powder and mix well. Add ghee little by little and keep stirring continuously till the ghee is absorbed and the mixture gets thick.

It should become one big lump, frothing and start leaving the sides of the vessel. Immediately transfer to a greased plate and pat with a greased spoon to get even surface. Cut into desired size pieces and allow it to cool.

Indeed a healthy burfi. Have made sathumavu urundai with jaggery. Never thought of burfi.

Tried this...but it was nowhere near the burfi state..it was more like bread crumbs..had to finally make urundai out of the maavu. is there anything missing in the ingredients. I took 1 cup sathu maavu and 3/4 cup sugar with just enough water to soak the sugar.
Felt the sugar syrup with 1 string consistency was quite less for the maavu

@ Jyoti..The reasons could be-probably u added very less water or allowed the sugar syrup to boil for a longer time..Did it become like crumbs as soon as you added the flour to the sugar syrup or later..if later then it means you have kept stirring it for a long time -more than that required..

Regd ur second doubt-you felt the sweetness to be less or quantity of syrup was not proportionate for the flour ??

Thanks for the reply. But it became like crumbs as soon as i added the flour. And as far as sugar syrup is concerned, i just waited for single string consistency..i dont think i allowed it to boil for longer time.
Regarding water ...i added just enough water to cover the sugar.

Not sure where i went wrong...

I made it into ladoo ...so i dont think sweetness was less.

So, i felt quantity of syrup was not proportionate to the flour

Jyoti...I think the sugar syrup quantity must have become less for the flour..try adding a little more water next time and also add the flour little by little so that you can adjust the quantity on the basis of the sugar syrup and retain a little flour if it is getting thick..
