Moong Dal Kichdi

This is the most easiest and the most nutritional breakfast. I love this khichdi for breakfast. Tastes very good and u can cook this quickly. My mother-in-law cooks this for breakfast most of the times and we all finish it in no time. The recipe is as given below.

Ingredients

1 cup rice
1/2 cup moong dal(greengram dal)
1/2 tsp mustard seeds
Pinch of hing
2 cloves
A small piece of cinnamon stick
1 bayleaf
All cut vegetables of your choice(potato, carrot, peas, cabbage, cauliflower, palak etc)
1 small cut tomato
Pinch of turmeric powder
1 tsp red chilli powder (if you like it less hot then add less red chilli powder according to your taste).
1/2 tsp dhania and jeera powder (coriander-cumin seeds powder)
1/2 tsp kichdi masala
1/2 tbsp ghee
Salt as per taste

Soak the moong dal and rice together for about 2 hours.Add little ghee in a pan. When the ghee becomes hot, add the mustard seeds. Once the seeds splutter, add asafoetida and then small piece of cinnamon, cloves and bayleaf. Fry them well. Now add the tomato pieces and once the tomato is soft and mushy add all the cut vegetables. Fry the vegetables well in the pan. Let all the vegetables get properly seasoned in the pan. Close the pan for about 2 min so that the vegetables are steamed a little. Now add the turmeric powder, red chilli powder and the kichdi masala. Finally add the moongdal and rice to the pan and fry it well.

When once you start preparing this kichdi on the other side of the gas keep about 4-5cups of water for boiling. Now add the boiling water in the pan. Once water is added, add salt as per your taste. Close the lid of the pan and let the rice, moongdal, vegetables and the masala get cooked together. After 10-15 min check if everything is cooked well, put off the gas and garnish with grated coconut and coriander leaves.
