Kofta Sambar




Ingredients (Translation)

For kofta

1/4 kg boiled potatoes
Salt to taste
1/2 tsp turmeric powder
1/4 tsp red chilli powder
2 tsp corn flour
oil to fry

For sambar

1/2 cup tamarind extract
2 tsp oil
1 tsp mustard seeds
1/2 tsp turmeric powder
1/4 tsp asafoetida
Salt to taste
2 tsp sambar powder
Coriander leaves to garnish
Few curry leaves

Mash potatoes, add salt, turmeric powder, red chilli powder and cornflour. Mix well and make small balls of it. Fry them till light brown. (You could even cook them in the microwave if you want to avoid oil).

Heat oil and add mustard seeds. When it splutters, add the tamarind extract, salt, turmeric powder, asafoetida, curry leaves and sambar powder. Let it cook for five minutes. Add the koftas to it and cook on sim for 10 minutes.

Garnish with finely chopped coriander leaves and serve hot with rice.

I like th eidea of alu kota instead of the dal ones! I was avoiding kofta sambar so long just because dal koftas were not appealing to me! Thanks!
