Ingredients
1 cup rice
1/2 cup skinned moong dal
1 and 1/2 cup vegetables chopped (cauliflower, potato,peas,carrots)
1 tsp jeera seeds
a pinch asafoetida
1 tomato
1 tsp. dhania-jeera powder
3.5 cup water
1/2 tsp turmeric powder
2 tblsp oilCoriander leaves - to garnish
Salt to taste
Ghee to serve
Method:
Wash rice and dal together.
Heat up the oil in a vessel and add jeera and asafoetida.
Then add turmeric, washed vegetables, and the rice and dal. Fry for 2 mins.
Add the chopped tomato and the dhania jeera powder. Stir for 1 minute more.
Then add 3.5 cups of boiling water and salt.
Cover and cook till done. (You may use a cooker and cook it for 2 whistles, reduce and simmer for 2 minutes.)
Serve hot with pure ghee and chopped coriander leaves on the khichdi.
