Vegetable Jalfarezi


Ingredients

2 cups cooked mixed vegetables cut lengthwise(cabbage, carrot, beans, capsicum)
1 onion cut lengthwise
2 tsp oil
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander seeds-cumin seeds powder
1 tsp garam masala powder
Salt to taste
Bit of sugar
4 tbsp tomato ketchup
2 onions for gravy
1 tsp ginger paste
1/2 cup fresh cream

Grind the onions for gravy and keep aside. Heat oil, add the chopped onions and fry for 2 minutes. Add the onion paste and ginger paste and fry for 2-3 minutes. Add turmeric powder, red chilli powder, garam masala powder, coriander seeds and cumin seeds powder, salt and sugar. Mix well for a minute. Add cooked vegetables and a little water for gravy as required. Allow it come to a boil and get a bit thick. Finally add the fresh cream and mix well for a minute.

Serve hot with rotis/naan/pooris/pulav
