Ingredients
2 boiled and cubed potatoes
1/2 cup cooked black eyed peas
2 tomatoes chopped
1 finely chopped onion
A bit of tamarind paste
1 tbsp grated jaggery
1/2 tsp ginger paste
Salt to taste
1 tsp garam masala powder
1/2 tsp turmeric powder
1 tsp coriander seeds-cumin seeds powder
2 tsp oil
1 tsp cumin seeds
Few curry leaves
Bit of asafoetida
Heat oil, add cumin seeds. When it begins to splutter, add curry leaves and asafoetida. Then add chopped onions and fry for 2 mins. Add ginger paste, tomatoes and cook for 2-3 mins. Now add turmeric powder, garam masala powder, coriander seeds-cumin seeds powder, tamarind paste, jaggery and salt. Mix well and add some water to get gravy.
Add chopped potatoes and cooked black eyed pea. Mix well and cook for some time till the masala gets mixed well with the potatoes and black eyed pea.
Garnish with chopped coriander leaves and serve with rotis/pulav/pooris
